Beetroot Salt and Vinegar Crisps

These healthy crisps are super easy to make and taste absolutely delicious. The flavour combinations are endless – use whatever herbs and spices you fancy. I used salt and vinegar for this recipe – a British classic you can’t get tired of!

Ingredients

  • 2 uncooked beets
  • 1 tbsp vinegar
  • A good pinch of sea salt

Method

  1. Heat the oven to 150 degrees. Scrub and wash the beets properly and slice them using a cheese slicer or grater.
  2. Place the slices on a tray covered in non stick baking paper and brush with the vinegar.
  3. Sprinkle salt over and bake in the oven for 20-25 minutes. Watch them towards the end as you want them crispy, not burnt!
  4. These crisps are lovely on their own or dipped in hummus.
