Hallongrottor

This is a simple and delicious Swedish recipe. The name means raspberry caves and they taste a lot like jammy dodgers. Hallongrottor can be both muffins and biscuits. I chose the latter when deciding what to make for my colleagues. You can’t go very wrong serving the Brits biscuits!

Ingredients for 25 biscuits

  • 250g plain flour
  • 200g butter
  • 75g coconut sugar
  • 1 tbsp vanilla extract
  • 1/3 jar raspberry jam

Method

  1. Preheat your oven to 175°C
  2. Mix the ingredients together and knead until you have a firm dough
  3. Roll the dough to a sausage and cut 25 equal pieces
  4. Roll each dough piece to a ball and press down the middle with your thumb, creating a hole
  5. Fill the holes with raspberry jam
  6. Bake the biscuits for 12-15 minutes and let them cool and crisp up on a rack
