This is a simple and delicious Swedish recipe. The name means raspberry caves and they taste a lot like jammy dodgers. Hallongrottor can be both muffins and biscuits. I chose the latter when deciding what to make for my colleagues. You can’t go very wrong serving the Brits biscuits!
Ingredients for 25 biscuits
- 250g plain flour
- 200g butter
- 75g coconut sugar
- 1 tbsp vanilla extract
- 1/3 jar raspberry jam
Method
- Preheat your oven to 175°C
- Mix the ingredients together and knead until you have a firm dough
- Roll the dough to a sausage and cut 25 equal pieces
- Roll each dough piece to a ball and press down the middle with your thumb, creating a hole
- Fill the holes with raspberry jam
- Bake the biscuits for 12-15 minutes and let them cool and crisp up on a rack
